Ingredients
230g caster sugar
230ml water
2lbs tomatoes peeled, seeded and chopped
Juice of 1 lemon
Method
Place all ingredients into a sauce pan and bring to the boil. Reduce heat and simmer for 1 hour.
Once cooled blend until smooth.
Strain and transfer mixture onto greaseproof paper inside a small loaf pan and freeze until set.
Once set break up and blend in the food processor again until smooth.
Freeze and blend again for an ultra smooth consistency.
